Keith Said – Head Chef, Caviar & Bull, Malta

Born in 1989, Keith Said began his culinary journey in Australia, where he honed his skills in dynamic, fast-paced kitchens. With a passion for refined cuisine and a drive for excellence, he went on to cook aboard luxury superyachts across the Mediterranean, delivering world-class dining experiences in exclusive settings. Returning to his roots, Keith further elevated his craft in several Michelin-rated restaurants in Malta. Today, as Head Chef at Caviar & Bull Malta, he brings together global influences, technical precision, and a deep respect for local ingredients to create innovative, memorable dishes.

Davide Pace. Head Sommelier, Caviar & Bull, Malta

Head Sommelier and Assistant Manager, Davide Pace, at Caviar&Bull, Malta, born in Sicily in 1996. Graduated in Oenology from the University of Pisa in 2019, Davide brings expertise and passion to crafting refined and memorable gastronomic experiences. He has gained valuable experience working in Michelin Guide restaurants and luxury catering between Portofino and Florence, bringing elegance and precision to every service.

Wine pairing is an art that deepens the dining experience — a dialogue between dish and glass that amplifies flavours, textures and emotion. A thoughtfully selected wine complements the chef’s intent, accentuating subtleties, balancing richness and cleansing the palate between courses. Through contrast and harmony, the sommelier guides you from bright, mineral whites to structured reds and delicate dessert wines, creating a seamless progression that reveals new dimensions in both food and drink.
