About
Caviar & Bull brings together two ingredients with unmistakable character: the elegance of caviar and the richness of prime beef.
Founded by Chef Marvin Gauci, it has grown from its original St Julian’s restaurant into two distinctive dining destinations, each with its own atmosphere and the same commitment to memorable food and hospitality.
At the flagship in Corinthia Hotel St George’s Bay, the experience is shaped by the seafront: candlelight, sea air and the energy of St Julian’s after dark. In Valletta, the setting shifts to the historic capital, where Old Bakery Street brings a quieter, more understated mood. The contrast gives each restaurant its own identity while the food remains anchored in premium seafood, caviar and expertly aged steaks.
The menu invites guests to explore those ingredients in different ways.
There are oysters and a selection of sturgeon caviars; bluefin tuna and beef tartares; scallops, Mediterranean prawns and fish; and Black Angus prepared as tartare, braised short rib or charcoal-grilled steak. The Legendary Plate captures the restaurant’s confident land-and-sea approach, bringing together Black Angus fillet, lobster popcorn, foie gras and sturgeon caviar.
Guests can choose between tasting menus centred on caviar, beef or both, with wine pairings available. For something theatrical to finish, the Golden Nugget combines pistachio in several textures beneath a gleaming finish of edible gold. It is a playful final flourish at a restaurant that clearly enjoys making dinner an occasion.
Caviar & Bull also offers private dining at both locations, with bespoke menus for celebrations and business gatherings. That sense of hospitality, where service, setting, wine and food all contribute to the evening is part of what makes the restaurant more than a menu.
We were proud to welcome Caviar & Bull into the story of The Supper Club | Malta’s first chapter. Its bold flavours and polished sense of occasion felt entirely at home at our table. Whether in St Julian’s or Valletta, Caviar & Bull makes a strong case for taking the evening slowly, and leaving room for one more course.
