About
Tucked into the historic heart of Rabat, The Golden Fork is a restaurant that feels closely connected to its surroundings. Set within a period building, with dining in an intimate courtyard and rooms above, it offers a lovely sense of occasion without losing its warmth. The cooking follows a similar path: grounded in Maltese and Mediterranean traditions, yet expressed with imagination and a modern touch.
At the centre of the experience is Chef Letizia Vella’s seasonal cooking. The menu follows the market and the rhythm of the seasons, drawing on local ingredients wherever possible; the restaurant says around 80% of its fresh produce comes from local farmers and suppliers.
Letizia has described childhood memories as a lasting source of inspiration, and that personal connection gives the food a sense of story as well as craft.
For guests who enjoy being surprised, the seven-course tasting menu offers a broad journey through the kitchen’s ideas. The dishes listed as examples range from foie gras meringue and slow-cooked Gozo octopus to Mediterranean prawns, local and wild fish, venison, artisan cheeses and the restaurant’s cloud caramelised brioche.
The selection changes, so these are a glimpse of the menu’s character rather than a fixed line-up. There is also a seasonal menu, allowing diners to choose their own progression through the courses.
What makes that range appealing is its movement between land and sea, familiarity and surprise. Gozo octopus and local fish speak to the islands; venison and carefully composed desserts take the meal in another direction. The cooking is precise, but the ingredients remain at the heart of it. Thoughtfully selected wine pairings are available to accompany both the tasting and seasonal menus.
The Golden Fork has earned a place in the Michelin Guide, and its Rabat address makes it an inviting destination for a dinner that feels considered from setting to final course.
At Chapter II of The Supper Club | Malta, Chef Letizia and her team brought that ingredient-led approach to the Malta Aviation Museum, pairing the menu with wines from Antinori. We were proud to welcome them to our table, and are delighted to introduce more people to the restaurant behind the evening.
From our experience, The Golden Fork excels on every front, from its setting and service to the quality of its cooking. It is a restaurant we recommend wholeheartedly.
